Pork Tacos

Spice up your next Taco Tuesday with these plant-based beauties! Succulent and juicy plant-based mince, with zesty guac and salsa! It’s a Mexican fiesta in your mouth!
Prep time: 25 minutes
Cook time: 10 minutes
Serves: 4
Ingredients:
- Salt and pepper
- 8 taco shells or tortillas
- Vegan cheese, grated
For the Salsa:
- ½ punnet cherry tomatoes, cut into quarters
- ¼ red onion, finely diced
- ½ lime, juiced
- ¼ bunch coriander leaves, roughly chopped
For the Guacamole:
- 1 avocado, mashed
- ¼ red onion, finely diced
- ½ lime, juiced
- ¼ bunch coriander leaves, roughly chopped
- 1 tsp Deliciou Taco Seasoning
For the Pork filling:
- 1 box Deliciou Plant-Based Pork
- 2 Tbsp Deliciou Taco Seasoning
- 2 Tbsp of an oil mild in flavour
- ½ red onion, finely diced
Directions:
- In a small bowl combine cherry tomatoes, onion, lime juice and coriander. Season with salt and pepper and toss to combine.
- In a separate bowl, place the mashed avocado, red onion, lime juice, coriander and Deliciou Taco Seasoning. Mix to combine.
- Follow the instructions on the Deliciou box and use the pork as a mince. Set aside.
- In a frying pan over a medium heat, fry the onion in the remaining oil. Add the Deliciou Plant Based Pork and Taco Seasoning. Cook for 6-8 minutes, breaking it up with a spoon as you go to resemble mince.
- Warm the taco shells or tortillas in the oven for 5 minutes before filling them with the pork mince and topping with grated vegan cheese, guacamole and salsa.
